Galète de Pérouges™

The Pérouges sugar galette is a type of sugar pie constituting a culinary speciality of the medieval city of Pérouges, in the Ain department, in France. Dating back to at least 1912, its name is a registered trademark.


Ingredients:

  • 300gr. flour

  • 20 gr. of fresh yeast

  • 1/2 glass of lukewarm water

  • 1 pinch of salt

  • 30 gr. sugar

  • 1 sachet of vanilla sugar

  • 2 tbsp. oil

  • 2 eggs

  • Lemon flavour

Method:

  1. Mix all the ingredients.

  2. Let rise for at least 1 hour.

  3. Knead again.

  4. Spread on oven paper (or in a previously buttered pie pan).

  5. Let rise another 1 hour.

  6. Sprinkle with small pieces of butter and powdered sugar.

  7. Bake for 10 minutes at 220°C.
